Light and fluffy, baked macaroni and cheese dish

Recipe Ingredients for Macaroni & Cheese Souffle

1 lb (16 ounces) Macaroni, cooked
1 lb (16 ounces) Cheddar Cheese, grated
6 Eggs
2 cans Evaporated Milk
8 T Margarine, melted
1 T Salt
1 T Pepper

Recipe Directions for Macaroni & Cheese Souffle

  1. Preheat oven to 350

  2. Cook 1 pound box of macaroni as instructed

  3. While the macaroni is cooking, grate 1 pound brick of cheddar cheese - I prefer sharp cheddar cheese.

  4. NOTE: Do not use pre-shredded cheese as it does not turn out as well.

  5. Drain the macaroni but DO NOT RINSE

  6. Return hot macaroni to a large mixing bowl and add the grated cheese (reserving about 1/2 cup for sprinkling on top)

  7. Continue to mix until the cheese is completely melted

  8. Add the eggs, evaporated milk, melted margarine, and salt and pepper to taste

  9. Pour mixture into a deep baking dish (it will be runny) and top with reserved cheese

  10. Bake for approximately 60 minutes - it is done when a knife or toothpick comes out clean - not runny
