From the healthy family cookbook (regular pasta replaced whole grain)

Recipe Ingredients for Macaroni and Cheese

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 pound Macaroni, Whole-wheat, Cooked
2 1/2 cups low-fat milk
6 ounces cheddar cheese
4 ounces monterey jack cheese

Recipe Directions for Macaroni and Cheese

  1. Boil macaroni. Drain and set aside.

  2. Melt butter over low heat. Stir in the flour to make a roux. Cook the roux for 5 minutes, stirring often.

  3. Raise the heat to medium-high. Gradually whisk the milk into the roux to make a sauce. Continue whisking the sauce until smooth and begins the bubble.

  4. Whisk in the cheeses, 2 ounces at a time. Continue whisking sauce until it is smooth and all cheese has melted. Approx. one minute.

  5. Remove from heat and season with salt and pepper.

  6. Mix in pasta and let rest for two minutes. Stir one or twice.
