Recipe Ingredients for Macaroni and Cheese Lite

8 oz whole wheat pasta
2 T extra virgin olive oil
2 c onion
2 cloves garlic
15 large baby carrots
16 oz frozen broccoli
1 c mushrooms
4 c cabbage, shredded
1 package frozen spinach
16 oz fat free cottage cheese
1/2 c fat free yogurt
1 c cheddar cheese
1 c Reduced Fat cheddar

Recipe Directions for Macaroni and Cheese Lite

  1. Pre heat oven to 350 degrees.

  2. heat oil and begin sauteeing onion and garlic until soft (about 8 min).

  3. Add carrots mushrooms; sautee until they begin to get tender (5-10 min). Add defrosted broccoli and spinach to the mix and heat through.

  4. Turn off heat then add cottage cheese and yogurt. Mix in cheddar cheese or sprinkle on top; whichever you prefer (I like it mixed in).

  5. Bake for 20-30 minutes or until heated through. (I like to bake it longer--until it starts to brown a bit on the top around the edges).

  6. Cool slightly to allow cheeses to set a bit; ENJOY!
