Recipe Ingredients for Macaroni & Cheese - Light (dinner size portions)

1 cooking spray
8 cups cooked wheat macaroni
16 oz reduced fat Cheddar cheese, shredded
24 oz fat free ricotta
1/2 cup grated Parmesan cheese
12 oz fat free sour cream
1/2 cup skim milk
1 pinch dry mustard
1 pinch cayenne pepper
2 Town House reduced fat crackers servings (12 crackers total), crushed (can substitute Ritz)

Recipe Directions for Macaroni & Cheese - Light (dinner size portions)

  1. Adjust oven rack to center position and heat oven to 350 degrees F. Spray two 9 inch square (or similar size baking dishes) with vegetable cooking spray.

  2. Mix cooked macaroni, cheeses, sour cream, seasonings, and salt and pepper. Turn into prepared pans.

  3. Sprinkle cracker crumbs over macaroni mixture. Bake until heated through crumbs are golden, 30 to 35 minutes.
