Low-carb macaroni and cheese. This recipe replaces the macaroni with tofu. Add spices to really pump up the flavor. It's actually better than you could imagine.

Recipe Ingredients for Macafoni and Cheese

1 lb. tofu, firm
2 cups cheddar cheese, fat free
2 eggs
1/4 cup half and half
1 tsp. salt
1 tsp. onion powder
1 tsp. garlic salt
1 dash hot sauce

Recipe Directions for Macafoni and Cheese

  1. Press and drain the tofu

  2. Combine eggs, half and half, and cheese.

  3. Dice the tofu into cubes

  4. Stir into the cheese mix

  5. Season

  6. Place into a 6 x 9 pyrex

  7. Bake at 375 degrees for 30-45 minutes or until golden brown and slightly crunchy on top. Should puff up.
