Healthified vegan mac n cheese with brocolli & kale

Recipe Ingredients for Mac n Trees

8 oz Whole Wheat Penne
300 g brocolli
4 c kale
2/3 c nutritional yeast
1/3 c wholewheat flour
1 T arrowroot
1/2 t ground turmeric
1/4 t garlic
2 T stock
2 c water
1 t yellow mustard

Recipe Directions for Mac n Trees

  1. Cook penne (or your choice of pasta) according to directions in a large pot. Add brocolli florets in last 5 minutes of pasta cooking & kale in last 2 minutes.

  2. In a bowl, mix nutritional yeast, flour, arrowroot and turmeric.

  3. Saute garlic in a little water in a medium pot. Mix vegetable stock powder with two cups of water.

  4. Add dry ingredients and stock to medium pot. Stir until mixture bubbles and thickens.

  5. Once thickened, stir in mustard.

  6. Drain pasta & vegetables and mix with cheeze sauce.
