Mac-N-Cheese Recipe

Makes 12 servings



Classic Macaroni and Cheese w/ a few twists. Servings based on ~1/2c portion size, but truly just "eyeballed".

Recipe Ingredients for Mac-N-Cheese

0.5 box Whole Grain Penne
2 cup Fancy Sharp Cheddar Shredded Cheese
1 cup Milk, Lowfat, Fluid, 1% Milkfat
8 oz Sour Cream Reduced Fat
1/2 cup dry Old Fashioned Quaker Oats
2 tbsp Unsalted Butter
0.25 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1 tsp Pepper, Black
2 tsp Onion Powder
1 serving Lite Mixture Salt

Recipe Directions for Mac-N-Cheese

  1. In a large pot boil penne to desired tenderness in unsalted water (or broth), drain, and set aside.

  2. Heat 1 tsp - 1/2 TBSP of extra virgin olive oil or butter over medium heat in a saucepan or small skillet.

  3. Add oats ensuring all are coated and toast until lightly browned and set aside.

  4. In a medium sauce pan (or the pot where pasta was cooked) melt the butter over low-medium heat. Add in flour and wisk until well mixed and a paste begins to form.

  5. Continue to wisk until roux begins to turn golden brown.

  6. Gradually add in milk, stirring constantly to avoid generation of lumps and to keep roux smooth.

  7. Ensure milk and roux are thoroughly mixed then add in sour cream and whisk until well incorporated.

  8. Add in cheese ~1/4c at a time, adding more in as soon as the last addition melts. Salt to taste.

  9. Once all cheese has melted you may either add pasta to the cheese mixture and stir well or place pasta in casserole dish and pour sauce over pasta, stirring to ensure coating of most of pasta and sauce coverage in most cracks.

  10. Top with oats and paprika if desired and bake for 30 minutes at 350F.
