Homemade Mac N Cheese, made with light cheddar, pureed butternut squash and 2% milk. You can subsitute skim milk and save some fat too. This is a huge hit with kids - even the picky eaters!

Recipe Ingredients for Mac N Cheese

1/4 cup butter
3 tbsp flour
2 cups cheddar, light, shredded
2 cloves garlic
2 cups milk
1/2 cup butternut squash, pureed
2 1/2 cups macaroni, dry

Recipe Directions for Mac N Cheese

  1. Make macaroni according to instructions.

  2. Melt butter and add garlic. Saute for a couple minutes.

  3. Whisk in flour, a bit at a time. Once combined, let brown a bit, whisking constantly.

  4. Whisk in milk, a bit at a time until the desired thickness is reached.

  5. Whisk in cheddar a bit at a time. If mixture becomes too thick, add more milk.

  6. Add in spices (I use a bit of cayenne, basil and oregano).

  7. Pour sauce over cooked macaroni and serve.
