Healthy version of mac n' cheese. My family loved it. I serve it with a green salad and roasted tomatoes.

Recipe Ingredients for Mac N Cheese Enlightened (from Rosie Schwartz on tv)

1/2 lbs. whole wheat pasta
10 oz. baby spinach
1 tbsp. margarine
1 cup onion, chopped
2 tbsp. flour
2 cups milk 1%
1 tsp. Dijon mustard
1 pinch cayenne
1 salt, pepper
1 cup low fat cheddar cheese, grated
1/3 cup fresh Parmesan, grated

Recipe Directions for Mac N Cheese Enlightened (from Rosie Schwartz on tv)

  1. Preheat oven to 350F.

  2. Spray with non-stick spray an 8-cup/2L ovenproof dish.

  3. Cook pasta according to directions, drain, set aside.

  4. Cook spinach in microwave 1 minute. Squeeze out the liquid and chop, set aside.

  5. Melt margarine in a saucepan and saute onions on med until lightly browned, about 8 minutes.

  6. Add the flour, stir and heat for 2 minutes.

  7. Gradually add the milk and whisk until thickened.

  8. Add 3/4 cup of the cheddar cheese and 1 tbsp. of the Parmesan. Mix till melted.

  9. Add salt, pepper, Dijon and pinch of cayenne.

  10. Add the pasta and spinach. Mix well and pour in the prepared greased baking dish.

  11. Put remaining cheddar and Parmesan on top.

  12. Bake at 350 for 20 minutes.
