Recipe Ingredients for Mac-n-Cheese w/ Beans

4 oz whole wheat macaroni
8 oz low-fat cottage cheese
1 T corn starch
3/4 cup milk
1/2 cup parmesan cheese
1/8 tsp ground black pepper
1 pinch ground nutmeg
1 1/2 cups cooked great northern beans

Recipe Directions for Mac-n-Cheese w/ Beans

  1. Cook macaroni, drain.

  2. Zap cottage cheese and beans until smooth.

  3. In 2-quart saucepan, blend corn starch with 1/4 cup milk until smooth. With wire whisk, slowly stir in remaining milk until blended. Cook over medium heat, whisking, until mixture has thickened slightly and boils. Remove from heat; stir in cottage cheese and beans, Cheddar, salt, pepper, and nutmeg, stir until cheddar is melted.

  4. Add macaroni. Serve hot with parmesan cheese on top, and broccoli if desired. . (not calculated)
