Recipe Ingredients for Mac and "Cheezeburger" Bake

16 oz farfalle pasta
12 oz vegan sausage crumbles
12 oz firm tofu, drained
1 1/2 c vegetable broth
5/8 c nutritional yeast
2 tbsp cornstarch
2 tbsp freshly squeezed lemon juice
1 1/4 tsp yellow mustard
1 tsp salt
1 1/4 tsp garlic powder
1 1/4 tsp onion powder
1/4 tsp ground turmeric
1/4 tsp black pepper
1/2 c panko bread crumbs
3 c chopped broccoli

Recipe Directions for Mac and "Cheezeburger" Bake

  1. Cook the pasta until al dente.

  2. In a food processor, process the tofu until smooth. Add the nondairy milk, broth, nutritional yeast, cornstarch, lemon juice, mustard, salt, garlic powder, onion powder, turmeric, and pepper. Blend until smooth.

  3. Preheat the oven to 375 F. Lightly oil a large baking dish and set aside.

  4. Drain the cooked pasta and return it to the pot. Add the veggie crumbles, broccoli, and the sauce mixture and mix well. Taste and adjust the seasonings.

  5. Transfer the mixture to the baking dish, top with bread crumbs, and bake until hot and the crumbs are nicely browned, about 30 minutes.
