This recipe was originally bacon mac and cheese. However, I am not about to fry up or open a whole thing of bacon for the two slices the recipe called for! So instead, I added smoked paprika which can yield a bacony taste minus the calories and work. You could also add bacon bits! (But I didn't have any). You also don't have to use almond milk, skim milk is fine! I just use what is in my house most of the time. Lastly, you could sub velveeta into this recipe if you prefer. On a side note this recipe yields about half the amount of sodium that the nutrient analysis says. Most of the sodium is dumped out with the water you cook the pasta in.

Recipe Ingredients for Mac and Cheese

3 1/4 teaspoon salt
15 ounces whole wheat pasta
1 1/2 cup almond milk
2 cups finely shredded sharp cheddar cheese
1/4 cup sliced green onions
1 teaspoon hot sauce
1/4 teaspoon pepper
1/4 teaspoon paprika

Recipe Directions for Mac and Cheese

  1. Bring 6 quartes water and 1 tablespoon salt to a boi. Ad pasta; cook 8 minutes or until al dente, drain.

  2. Combien flour and 1/2 cups milk in a saucepan over medium heat. Gradually add 1 cup milk; bring to a boil Cook 1 minute, stirring constantly. Remove from heat; let stand 4 minutes or until it cools to 155 degrees.

  3. Stir in 1 1/2 cups cheese. Ad 1/4 teaspoon salt, onions, hot sauce, pepper, and bacon/bacon bits/smoke paprika; stir.Add pasta; toss.

  4. Spoon into a 2 quart broiler safe dish coaked with cooking spray; top with 1/22 cup cheese. Broil 7 minutes
