Yum and not nearly as bad as regular classics.

Recipe Ingredients for Mac and Cheese

1/2 pound whole wheat penne
1 tbsp margarine
3/4 tbsp whole wheat flour
1 1/4 cup 2% milk
1/2 cup light cheddar cheese
1/2 tsp salt
1/4 cup carrot
1/4 cup panko
1 tbsp grated parmesan

Recipe Directions for Mac and Cheese

Cook pasta al dente. Preheat oven to 375 F. Coat 9" pan with cooking spray. Heat margarine in pot, whisk in flour until smooth. Slowly whisk in milk, no lumps. Bring to a boil and thicken mixture, about 5 mins. Add cheddar, salt and carrot puree and whisk until smooth. Add pasta to cheese and mix well. Put in baking dish and cover with breadcrumbs and parmesan. Bake until bubbly and breadcrumbs begin to brown, about 20 mins.
