From Ellie Krieger, a delicious Mac & Cheese recipe that replaces some of the cheese with frozen winter squash. Still very tasty, almost impossible to tell the squash is there.

Recipe Ingredients for Mac & Cheese

1 pound elbow macaroni
20 oz winter squash
2 cups milk
4 ounces Cheddar
2 ounces Monterey Jack cheese
1/2 cup part-skim ricotta cheese
1 teaspoon salt
1 teaspoon dry mustard
1/8 teaspoon cayenne pepper
2 tablespoons grated Parmesan
2 tablespoons bread crumbs
1 teaspoon olive oil
