Makes 4 servings if using as a side dish or 2 servings if using as a main course. Using Catelli Smart pasta provides lower calories and higher fiber values that shown for this recipe. Using a mix of Cheddar, Part Skim Mozzarella & light swiss as part of your shredded cheese ingredient will lower the fat content than if you use all cheddar cheese.

Recipe Ingredients for Mac & Cheese

1 1/2 cups Rotini (I use Catelli Smart pasta)
1/8 cup margarine (I use Becel with Olive Oil)
1/8 cup flour
1 1/2 cups warm 1% milk
1 1/2 cups shredded cheese (I use 1/2 cup each old cheddar, part skim mozzarella & light swiss)

Recipe Directions for Mac & Cheese

  1. Cook pasta according to package directions.

  2. Melt margarine.

  3. Add flour; cook and stir 3-4 minutes.

  4. Gradually whisk in milk; cook, stirring constantly until just thickened.

  5. Season to taste (salt, pepper).

  6. Remove from heat; stir in cheese until melted.

  7. Add macaroni and toss to coat.

  8. Serve topped with tomato and red pepper flakes, if desired
