Recipe Ingredients for Mac and Cheese

5 oz Rotini
2 breast, bone and skin removed(86 g) Chicken, Breast, Meat Only
1 cup, diced Cheddar Cheese
3 oz Goat, Soft Type Cheese
0.5 cup Milk, Fluid, 3.25% Milkfat
1 tbsp Butter
2 tsp Classic Dijon Mustard
0.25 cup Panko
1 clove Garlic

Recipe Directions for Mac and Cheese

  1. braise the chicken in seasoning that suits your families taste( i use paprika, garlic, onion, and chili powder).

  2. Once chicken is cooked remove from pan and reduce the braising liquid to almost nothing.

  3. Add butter to deglaze the pan, get all brown bits off the bottom and and flour. Allow flour to cook for 1-2 minutes before adding milk. Wisk continuously until liquid is smooth.

  4. Add cheeses and allow them to melt stirring frequently. Reserve about 1/8 cup of cheddar for topping

  5. Season the sauce to taste.

  6. Shred the cooled chicken and return it to the sauce.

  7. Make pasta according to package directions.

  8. In a casserole dish assemble the pasta and sauce mixing well.

  9. Sprinkle panko and reserve cheese on top

  10. Broil for 10-15 minutes until top is golden brown and cheese is melted
