Recipe Ingredients for mac & cheese - lite with evaported skim

4 oz. whole wheat elbow macaroni
1 1/2 T. butter
1 1/2 tbsp. flour
1 c. evaporated skim milk
1/2 t. salt
1 dash of pepper
4 oz. (1 c.) Velveeta light

Recipe Directions for mac & cheese - lite with evaported skim

  1. Preheat oven to 400 degrees.

  2. Grease 1 qt. Casserole or baking dish with margarine.

  3. Cook macaroni as pkg. directs. After cooking, drain the macaroin in a colander and rinse with cold water.

  4. PREPARE THE CHEESE SAUCE:

  5. a. In medium saucepan over medium heat, melt 1 T. butter.

  6. b. Add fllur and stir until smooth (forms a paste). Remove from heat.

  7. c. Gradually add milk, stirring or whisking constantly until mixture is smooth.

  8. d. Add salt and pepper.

  9. e. Return pan to medium heat. Cook, stirring constantly with wooden spoon (or with whisk if it seems to be lumpy) mixture will become smooth and thicken as it cooks.

  10. f. Add just 3./4 c. of the grated cheese a little at a time and stir until melted.

  11. g. Cover pan and remove from heat.

  12. Put cooked, well-drained macaroni into buttered baking dish.

  13. Pour cheese sauce over the macaroni, and toip with remaining c. grated cheese.

  14. If topping of bread crumbs is desired, toss c. bread crumbs with 1 T.melted butter and sprinkle over the top of the casserole.

  15. Bake at 400 degrees for 15-20
