Traditional Mac and Cheese with Spinach

Recipe Ingredients for Mac and Cheese Florentine

8 oz dry macaroni
2 tbsp butter
8 oz frozen spinach
1 small onion, chopped
1 cup skim milk
2 tbsp flour
1 1/2 c. grated cheese
1 Salt, Pepper, Garlic, and Nutmeg to Taste

Recipe Directions for Mac and Cheese Florentine

  1. Cook macaroni according to package directions.

  2. Sauté the onion in one tablespoon of the butter. Add the spinach and cook until heated through and no water remains in pan. Add the garlic and stir just until fragrant.

  3. Reduce the heat and add the other tablespoon of butter. Sprinkle the flour over the vegetables and butter and stir until fat is absorbed.

  4. Slowly add milk, stirring the veggies. Let that cook over low heat, stirring constantly, until thickened. Add pepper, salt, and nutmeg, and stir in cheese.

  5. Combine in casserole dish and bake at 350 for 20 minutes or so, until edges are starting to brown and the smell has you pressing your face against the glass of the oven door.
