I adapted this to be a bit more healthy from a Cooking Light recipe. You can be creative with the kind of cheese you use, or add sausage, veggies, whatever you like to this basic delicious mac and cheese. This is delicious!!! It was even smooth and creamy the next day. I decreased the pasta to 10 oz which increased the cheesy-ness.

Recipe Ingredients for Mac and Cheese: Creamy Stove-top (no bake) version

12 oz whole wheat pasta (or spelt, or quinoa)
3 tablespoons oat flour
1 teaspoon salt
1/4 teaspoon black pepper
2 1/4 cups fat-free milk
2 oz low fat cream cheese (1/4 cup)
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon garlic (or 1/2 shallot for a more mild flavor)
5 oz shredded cheddar cheese (1.25 cups) (variations: low-fat cheddar, artisan cheddar, smoked cheese, add parm-reg, or a mix.)

Recipe Directions for Mac and Cheese: Creamy Stove-top (no bake) version

  1. Cook pasta according to package directions.

  2. Drain and set aside.

  3. While pasta cooks, place flour, salt, and pepper in a large saucepan.

  4. Add milk, stirring with a whisk until well blended.

  5. Drop cream cheese by teaspoonfuls into milk mixture as you bring to a boil over medium-high heat, stirring constantly.

  6. Reduce heat; simmer 2 minutes or until thick and cream cheese melts, stirring occasionally.

  7. Stir in mustard, Worcestershire, and garlic, simmer 1 minute.

  8. Remove from heat. Add cheddar cheese, stirring until cheese melts.

  9. Combine pasta and cheese sauce in the pot or a large bowl; toss well.
