More than just simple baked Mac and Cheese. The chicken and vegetables make it a complete meal in one.

Recipe Ingredients for Mac and Cheese Casserole

13 1/4 oz whole wheat pasta
10 oz frozen spinach, thawed and drained
8 oz chicken, cooked and shredded
4 oz zucchini, shredded
8 oz tomato, chopped
8 oz onion, grilled
1 cup low fat cottage cheese
1 cup sharp cheddar cheese, shredded
1/3 cup cheddar cheese, shredded
1/4 cup Parmesan cheese, shredded
3 tbsp bread crumbs
1/4 tsp paprika
1 3/4 cups skim milk, divided
1 ground pepper
3 tablespoons all-purpose flour
1/8 tsp nutmeg

Recipe Directions for Mac and Cheese Casserole

  1. cook pasta according to the package, draining it when its al dente (still a little firm)

  2. cool noodles with water and mix in chicken, onions,tomato and zucchini

  3. Heat 1 1/2 cups milk in a large heavy saucepan over medium-high heat until steaming

  4. Whisk remaining 1/4 cup milk and flour in a small bowl until smooth; add to the hot milk and cook, whisking constantly, until the sauce simmers and thickens, 2 to 3 minutes

  5. Remove from heat and stir in Cheddar until melted. Stir in cottage cheese, nutmeg and pepper

  6. layer a 9X13 casserole dish with spinach and noodle mixture

  7. cover noodles with sauce

  8. in a small bowl mix paprika, bread crumbs and Parmesan cheese

  9. sprinkle mixture over noodles

  10. bake at 450 for 25-30 minutes or until bubbly.

  11. TIP: let sit for 5-10 minutes after removing from oven so that the sauce and casserole thickens up a bit
