made with whole wheat stuff and lowfat cheese and skim milk

Recipe Ingredients for Mac and Cheese Baked

4 tbs Bread Crumbs
1 tsp extra-virgin olive oil
1/4 tsp paprika
8 oz frozen peas
1 3/4 cups skim milk, divided
3 tbs White Whole Wheat Flour
2 cups shredded Cheddar cheese, reduced fat
1 cup low-fat cottage cheese
1/8 tsp ground nutmeg
1/4 tsp salt
1 Freshly ground pepper, to taste
8 ounces (2 cups) whole-wheat elbow macaroni, or penne

Recipe Directions for Mac and Cheese Baked

  1. Put a large pot of water on to boil.

  2. Preheat oven to 450F.

  3. Spray an 2-quart baking dish with nonstick cooking spray.

  4. Mix breadcrumbs, oil and paprika in a small bowl.

  5. Put frozen peas in a microwave safe container with lid. Add about 1 inch of water, and put lid on, and zap for 4 minutes. Drain water when done.

  6. In a large heavy saucepan heat 1 1/2 cups milk over medium-high heat until steaming.

  7. Whisk left over 1/4 cup milk and flour in a small bowl until smooth. Add to the hot milk and cook, whisking constantly, until the sauce simmers and thickens, 2 to 3 minutes. Remove from heat and stir in Cheddar until melted. Stir in cottage cheese, nutmeg, salt and pepper.

  8. Cook pasta in boiling water for 4 minutes, or until not quite tender (don?t worry ? it will continue cooking when you bake it). Drain and add to the cheese sauce and mix well.

  9. Spread half the pasta mixture in the prepared baking dish. Spoon the peas on top. Top with the remaining pasta. Sprinkle with the breadcrumb mixture.

  10. Bake the casserole until bubbly and golden, 25 to 30 minutes.
