Mabon Muffins Recipe

A deliciously healthy apple and carrot cake. Cooked at this size they are snack size and great for parties!

Recipe Ingredients for Mabon Muffins

4 oz sunflower oil
4 oz sugar
8 oz wholemeal flour
8 oz plain flour
8 oz grated apple
8 oz grated carrot
3 eggs
1 tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp mixed spice

Recipe Directions for Mabon Muffins

  1. Blend together the oil, eggs and sugar

  2. Add the grated carrot and grated apple and mix in

  3. In a separate bowl sift together baking powder, cinnamon/spices, salt and both flours.

  4. Add this to the apple and carrot mixture and blend in.

  5. Place into cake cases and bake in the oven until golden brown and cooked through (you can test this with a knife, when it comes out clean, you're good)

  6. Serve hot or cold, hot is lovely in the mornings, but cold is good to share around.

  7. Postnote - if you make these larger, they can be sliced and buttered whilst hot for a delectable breakfast :D
