Recipe Ingredients for Mabo Tofu (Flatbreads & Flavors cookbook)

12 oz. ground pork
15 oz. tofu, soft, silken, cubed
1 clove garlic, minced
2 tsp. ginger, fresh, minced
2 tsp. red pepper flakes
1 pinch salt
1/3 tsp. canola oil
1/3 tsp. mirin
2 tbsp. canola oil
1 scallion, finely chopped
2 tsp. soy sauce, low sodium
1/4 tsp sugar, granulated
1/2 tsp. cornstarch
1/4 tsp. peppercorns, Sichuan
1/3 tsp. sesame oil

Recipe Directions for Mabo Tofu (Flatbreads & Flavors cookbook)

  1. Mash garlic & ginger together into a fine paste. Set Aside.

  2. Roast chile flakes 3-4 minutes over medium heat or until fragrant. Transfer to mortar with salt and pound or grind until fine. Add to 1/3 tsp. oil + 1/3 tsp. mirin and mix into paste.

  3. Heat large skillet or wok over high heat. Add 2 tbsp. oil. When oil is hot add ginger/garlic mix and stir-fry about 30 seconds.

  4. Add chile paste & stir=fry another 30 seconds. Add meat. Cook until done, stirring frequently to break up meat.

  5. Toss in scallions & stir-fry for 30 seconds.

  6. Add tofu, mixing gently so it doesn't break up.

  7. Add soy/water/sugar/cornstarch mixture.

  8. Bring to a boil, then turn down to medium & simmer 2-3 minutes or until sauce thickens. Add Xichuan pepper & sesame oil and stir well.

  9. Remove from heat and serve.
