Recipe Ingredients for Ma Po Tofu

8 oz firm tofu
3 clove Garlic
1 tsp Ginger, Ground
1 tblsp Cornstarch
1 tsp Toasted Sesame Oil
2 tbsp chopped Onions
1 tsp Peppercorns
2 tbsp Soy Sauce

Recipe Directions for Ma Po Tofu

  1. Make sauce:

  2. Stir together 1 cup water, bean paste, soy sauce, and kosher salt. Set aside.

  3. Stir-fry turkey:

  4. Heat a wok or large heavy skillet over high heat until hot and add turkey, garlic and ginger and stir-fry over moderate heat until very fragrant, about 2 minutes.

  5. Finish stir-fry:

  6. Stir reserved sauce, then add to meat and bring to a simmer. Drain tofu in a large sieve and slide into sauce, stirring gently.

  7. Stir cornstarch with 2 tblsp water and add to stir-fry. Bring to a boil, stirring gently, and cook until thickened and glossy, about 15 seconds.

  8. Turn off heat and sprinkle with sesame oil, Sichuan-peppercorn powder to taste, and 2 tablespoons scallion. Stir once or twice, then serve sprinkled with remaining tablespoon scallion.
