hearty, meatless meal! Great for cold weather

Recipe Ingredients for Lyn's Potato Leek Soup

2 1/2 lb potatoes
5 oz leeks
2 1/2 c half and half
4 T butter
1 t salt
1 t pepper
1 1/2 c potato flakes
3 c water

Recipe Directions for Lyn's Potato Leek Soup

  1. bring 6c water to a boil.

  2. wash and cube potatos w/skins on and add to salted water -- boil hi to reduce

  3. wash and remove unwanted tops from leeks. chop coarse & add to boiling potatoes.

  4. Season w/ Penzey's Mural blend & Foxpoint

  5. Reduce to half the water, add half and half, butter, then whisk in potato flakes
