This is a great make-ahead salad base you can either toss with croutons and dressing as a side or dress and add protein as an entree!

Recipe Ingredients for Lynn's Tossed Green Salad

3 head Lettuce, Cos Or Romaine
10 medium (3/4" to 1" dia) Radishes
2 large (8-1/4" long) Cucumber, Peeled
2 large raw Zucchini
3 serving Green Onions
2 cup, shredded Radicchio

Recipe Directions for Lynn's Tossed Green Salad

  1. Peel any unusable (ie wilted or brown) outer leaves from heart of romaine if necessary; Cut the heads lengthwise, then slice 1? for bite sized pieces of lettuce

  2. Quarter, core and chop radicchio into bite sized pieces

  3. Add lettuce and radicchio to washtub or dishpan of cold, clean water ? agitate and rub the leaves together, and then leave for a few minutes for any dirt to sink to the bottom of the tub

  4. ?Lift? the greens out of the tub and spin in groups ? add to large tub or container that leaves lots of space for other ingredients and tossing (I use a dishpan)

  5. Wash, trim and slice radishes slice thin ? if you can only get small radishes, clean trim and quarter them / add to dishpan

  6. Clean, trim and cut green onion into thin slices cut on the bias (on the diagonal) / add to dishpan

  7. Peel cucumber and core our seeds (either by quarter-ing and slicing out the seed on the diagonal with a knife or by halving and scooping out seeds with a spoon) / add to dishpan

  8. Toss all to evenly distribute all the ingredients; divide among two gallon sized Zip-Lock bags to keep fresh ? store in produce door in the fridge
