Recipe Ingredients for Lynn's Split Pea Soup

2 tbsp. extra virgin olive oil
1 medium onion, chopped
4 carrots, chopped
4 stalks celery hearts
1/2 tsp. garlic, minced
1 lb. dried split peas
1/4 tsp. ginger
1 bay leaf
4 cups chicken broth
4 cups water
1 lb. cooked boneless pork sirloin or ham, diced

Recipe Directions for Lynn's Split Pea Soup

  1. Heat olive oil in large pot or dutch oven. Add onion, carrots, celery and cook over medium heat until translucent and soft.

  2. Add garlic and cook about 2 minutes.

  3. Add remaining ingredients and bring to a simmer. Do not boil. Simmer for about 2 hours, or until desired consistency. (It should be thick.)

  4. Remove bay leaf and throw it away. Serve soup hot.
