what a great soup! This recipe is a healthier variation on a recipe from long-ago chef David Wade (Dallas). His version involved a pound of bacon, and frying the potatoes in the bacon fat -- you get the idea. BUT - trust me - this is delicious, easy, filling, and very light fare. Makes 8 x 2 1/4c servings as a meal, or 16 x single cup servings to go with a salad or sandwich.

Recipe Ingredients for Lynn's Simple Green Bean Stew

32 oz canned green beans
24 oz potato
16 oz onion
28 oz stewed tomatoes
10 oz Rotel tomatoes
10 oz bacon
16 oz smoked ham
11 oz V-8 juice
1 1/2 t black pepper
1 t salt

Recipe Directions for Lynn's Simple Green Bean Stew

  1. Snip the bacon into 1/2" bits, then fry up in the bottom of a large soup pot.

  2. Remove the bacon to cool, and use the drippings to saute the chopped onion until it just begins to caramelize.

  3. Add green beans with liquid, diced-unpeeled organic potatoes, and 4-5 c water or low sodium chicken broth to the pot and bring to a boil.

  4. Cook for 20 minutes at a med boil, or until potatoes are tender. Allow the liquid to boil off naturally so the pot contains 2/3 solids and 1/3 liquid.

  5. Add stewed tomatoes (or diced tomatoes in sauce, or chunky mostly-tomato spaghetti sauce), V-8, small-dice ham (I like to use Dietz and Watson Black Forest Ham, or even Oscar Mayer Smoked Ham lunch meat,) bacon, and salt. Return to a boil, then turn down burner and simmer while covered for 20 minutes.

  6. 1 cup is a side; 2 cups is a meal!
