Recipe Ingredients for Lynn's Minestrone Soup

454 g chopped tomatoes
454 g cannelini beans
2 medium onions
1 stock cube
2 leeks
1 large carrot
100 g frozen peas
100 g celery
100 g dried pasta
1 T olive oil
1 T sugar
1 salt and black pepper to taste

Recipe Directions for Lynn's Minestrone Soup

  1. Fry chopped onion, diced carrot and diced celery in olive oil for 5 mins over medium heat.

  2. Add chopped tomatoes, stock cube, water and sugar and heat until simmering.

  3. Simmer covered for 20 minutes.

  4. Add cannelini beans, chopped leeks, frozen peas and dried pasta.

  5. Simmer for 30 minutes.

  6. Add salt and pepper to taste
