Recipe Ingredients for Lynn's Chicken Corn Chowder

2 tbsp. olive oil
1 cup water
4 carrots, diced
4 medium stalks celery hearts, diced
1 medium onion, diced
1 1/2 lbs. boneless skinless chicken breast, cooked and shredded
4 medium potatoes, peeled and cut up into about 1 inch cubes
4 cups (2 lbs.) frozen corn
30 oz. (2 cans) creamed corn
43 1/2 oz. (3 cans) chicken broth
24 oz. (2 cans) skim evaporated milk
2 tsp. parsley flakes
1/2 tsp. thyme
1/2 cup corn flour

Recipe Directions for Lynn's Chicken Corn Chowder

  1. In a stock pot, saute carrots, celery, and onions in oil and water until onions are tanslucent.

  2. Add remaining ingredients, except corn flour. Cover and simmer until potatoes are tender, stirring occasionally.

  3. Stir in corn flour and cook until thickened, stirring often.

  4. Add salt and pepper to taste.

  5. Serve hot.
