Lean pork tenderloin chopped into Marinara, over a pile of linguini!

Recipe Ingredients for Lynn's Big Plate of Pasta

16 oz pork tenderloin
48 oz Marinara Sauce
1 oz red wine
1 lb dry pasta
3 oz parmesan cheese

Recipe Directions for Lynn's Big Plate of Pasta

  1. Season and roast tenderloin until done through. Cool and mince fine and toss with wine. *you can also use Jimmy Dean lean bulk sausage for about the same calories -- just brown it in the pot before adding wine and marinara.

  2. In a large pot, add marinara (grocery store jars - almost any brand) and pork. Allow to cook down a little while pasta cooks.

  3. Bring water to boil and cook pasta until done.

  4. Add drained pasta to marinara. 6 generous servings (about 12-13 oz each) with a generous shake of parm cheese.
