eggplant, zucchini, peppers, red onion, garlic

Recipe Ingredients for Lynne's Roasted Vegetables

1 eggplant, chopped
1 zucchini, sliced
3 cloves garlic, chopped
1/2 red onion, sliced
1 green pepper, chopped
1 red pepper, chopped
1/8 c olive oil
1 tsp Italian seasonings
1 tsp salt
1/2 tsp pepper

Recipe Directions for Lynne's Roasted Vegetables

  1. Chop per directions

  2. Spread on jelly roll pan

  3. Drizzle with half the olive oil

  4. Bake in a 350 degree oven, stirring every 20 minutes.

  5. Add more olive oil if needed

  6. Bake until roasted to desired consistency (not steamed) - at least 1 hour.
