Recipe Ingredients for Lynne's Meatless Baked Mostaccioli

1 lb mostaccioli, cooked al dente
1 c cottage cheese with chive
16 oz part skim ricotta cheese
16 oz reduced fat mozzarella, shredded
2 cup Prego chunky tomato, garlic, and onion sauce
1/4 c parmesan cheese, grated
2 large eggs
1 tsp garlic powder
1/2 tsp Italian seasoning

Recipe Directions for Lynne's Meatless Baked Mostaccioli

  1. Cook past per package directions for al dente.

  2. While pasta is cooking, use cooking spray to spray a large casserole. Add ricotta, cottage cheese, the eggs, and spices and mix thoroughly.

  3. Add 3/4 of the mozzarella and 1.75 c of the sauce.

  4. Drain mostaccioli and add to casserole and mix until combined.

  5. Sprinkle the remaining cheese on top, then add the remaining sauce.

  6. Top with parmesan.

  7. Cook in a 350 degree oven for 20-30 minutes or until bubbly.
