Classic ACS with ground beef, macaroni, onion, pepper, celery, and crushed tomatoes.

Recipe Ingredients for Lynne's American Chop Suey

1 lb lean ground beef
1 lb elbow macaroni, cooked
28 oz canned tomatoes, crushed
1 stalk celery, sliced
1 large onion, diced
1 green pepper, diced
1 tsp salt
1/2 tsp pepper
2 T olive oil

Recipe Directions for Lynne's American Chop Suey

  1. Put water on to cook pasta (the recipe calls for elbows, but you can use rigati, casserole macaroni, or rotini).

  2. While water is coming to a boil, chop vegetables.

  3. Put the pasta on to cook, undercook slightly because it will cook more once you add all the ingredients.

  4. While pasta is cooking, saute vegetables in olive oil for 5-10 minutes.

  5. Add ground beef and break up with a spoon.

  6. Drain the pasta, add the crushed tomatoes, and sauted vegetables, and gently stir to mix.

  7. Add salt and pepper to taste.

  8. Serve sprinkled with grated parmesan or romano cheese.
