Adapted from a Bon Appetit beef stew recipe and a Bon Appetit lamb stew.

Recipe Ingredients for Lyndsey's Irish Beef Stew

5 pounds stew beef
1/4 cup olive oil
3 tablespoons butter
1 tablespoon sugar
1 pound red potatoes, (20 baby potatoes)
6 large carrots
3 medium onions, quartered
2 leeks, split lengthwise and cut into 1/2 inch thick slices
1/3 cup fresh parsley, chopped
1 1/2 tablespoons fresh thyme
4 cups beef broth
2 cloves garlic
1 tablespoon Worcestershire sauce
3 tablespoons tomato paste
1 tsp salt
1 tsp ground black pepper

Recipe Directions for Lyndsey's Irish Beef Stew

  1. Heat oil in heavy large pot over medium-high heat. Add beef and sauté until brown on all sides, about 5 minutes. Add garlic and sauté 1 minute. Add beef stock, tomato paste, sugar, thyme, and Worcestershire sauce. Stir to combine. Bring mixture to boil. Reduce heat to medium-low, then cover and simmer 1 hour, stirring occasionally.

  2. Meanwhile, melt butter in another large pot over medium heat. Add potatoes, onion and carrots. Sauté vegetables until golden, about 20 minutes. Add vegetables to beef stew. Simmer uncovered until vegetables and beef are very tender, about 40 minutes.

  3. Remove 1 cup vegetables to puree. Puree removed vegetables and return to stew. Season with salt and pepper.

  4. Tilt pan and spoon off fat. (Can be prepared up to 2 days ahead. Cool slightly. Refrigerate uncovered until cold, then cover and refrigerate. Bring to simmer before serving.) Transfer stew to serving bowl. Sprinkle with parsley and serve.
