Using my recipe for Casey's Taco Meat, we made a yummy, easy casserole!

Recipe Ingredients for Lyndi's Taco Casserole

2 lb. Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles1 med. Onions
2 cloves Garlic
11 oz. Low Sodium V8 100% Vegetable Juice
1 tsp. Salt, Table
1 tsp. Pepper, Black
4 tbsp. Chili Powder
2 tbsp. Cumin Seed
1 tsp. Sugars, Granulated
1 tsp Pepper, Red Or Cayenne
3 tort Die Cut Flour Tortillas
1 serving Flour Burrito Size Tortillas
3/4 serving Buena Vida Whole Grain Tortillas
1 cup Cheese

Recipe Directions for Lyndi's Taco Casserole

Cook Casey's Taco meat as instructed. Then layer the burrito shell on the bottom of a lightly 'pam'ed square pan (9x9 or so). Then one cup of taco meat. Then the healthy taco shell, another cup or so of meat mixture. Then break up the small azteca shells followed by the rest of the meat. Bake at 350 for 30 minutes. Remove and add 1 cup of mozzarella cheese and return to oven until mozzarella is nicely melted. Serve with salad or chips and salsa.
