Lean ground beef chili made with V8 juice instead of tomato sauce. Preferrably low sodium V8.

Recipe Ingredients for Lyndi's Homemade Chili

1 lb. lean ground beef
1/2 onion, chopped fine
2 cloves garlic, minced
1/4 tsp. black pepper
1 tsp. hot sauce
46 oz. V8 100% Vegetable Juice
1 1/2 cups chili beans
2 cups light red kidney beans
6 tsp. chili powder

Recipe Directions for Lyndi's Homemade Chili

Cook onion, garlic, and hamburger and crumble as you cook. Drain off any fat that may be there after meat is thoroughly cooked. Sometimes I brown meat ahead of time, reheat, and add the rest. Drain kidney beans, leave chili beans in their chili sauce. Add beans, black pepper, V8 and hot sauce (optional). Best if you use the low sodium version of V8 but WalMart was out of it today. Add chili powder to taste (about 6 tsp.). Allow to simmer as long as you can (atleast a half hour to an hour). Serve hot alone or on rice or on macaroni noodles.
