Recipe Ingredients for Lyndi's Chicken Pot Pie

1 1/2 cup frozen mixed vegetables
1/4 cup butter
1/4 cup flour
1/3 cup onion, chopped
1/2 tsp. salt
1/4 tsp. black pepper
16 oz. 99% Fat Free All Natural Chicken Broth Rtsb
2/3 cups skim milk
1 1/2 cups cooked chicken, cut up
1 1/2 medium baked potato, diced
2 1/4 cup flour
1/2 tsp. salt
2/3 cup shortening
7 tbsp. cold water

Recipe Directions for Lyndi's Chicken Pot Pie

  1. Rinse vegetables to separate, drain. Melt butter in large pot and saute onion w/ salt and pepper until soft. Add flour and cook until bubbly. Stir in broth & milk. Heat to boiling, stirring occasionally, Boil for 1 min..

  2. Stir in chx, veggies & potatoes. Remove from heat.

  3. Place one pie crust in square pan, ensuring sides are covered. Pour chicken mixture in and top w/ other pie crust. Fold crust edges over and fork to seal pie.

  4. Bake 35 minutes at 425 degrees F Let cool for 10-15 minutes.
