Baked skinless sweet potatoes then baked again in oven with the goodies on them!

Recipe Ingredients for Lyndi's Baked Sweet Potatoes

2 medium sweetpotato
4 tsp. brown sugar
1/4 tsp. salt
1/4 tsp. black pepper
2 tbsp. butter
1 1/2 oz. mini marshmallows

Recipe Directions for Lyndi's Baked Sweet Potatoes

Peel and cook two sweet potatoes in microwave until tender. Placed in lightly "pam"ed pan and cut open, smash or dice. Spread across the small 8x8 or 9x9 baking dish and then drizzle about 2 tbsp. butter over them followed by salt and pepper, brown sugar, and mini-marshmallows. Bake until marshmallows are melted and cooked. Serve right away--they are yummy served warm!
