Chocolate chips make the high fiber muffin a bit more of a treat than your usual high fiber muffin. Modified by using Whole wheat flour, and regular brown sugar.

Recipe Ingredients for Lynda's High Fiber Banana Chocolate-Chip Muffins Recipe- Modified

3 cups All-Bran cereal
1 cup 1% Milk
1/2 cup Brown Sugar
2 Eggs
1 cup banana, mashed
1/2 cup semi-sweet chocolate chips
1/2 cup Oatmeal, thick cut, organic
1 teaspoon Baking soda
1 teaspoon Cinnamon
1 cup Whole Wheat flour

Recipe Directions for Lynda's High Fiber Banana Chocolate-Chip Muffins Recipe- Modified

  1. In a large bowl, mix cereal and milk and let stand about 5 minutes to soften. Add remaining ingredients and mix well.

  2. Spray 12-cup muffin tin with cooking spray and fill muffin cups with batter. You can fill to the top since the muffins do not rise very much. (or use muffin papers)

  3. Bake at 400 for 18 to 20 minutes.
