Healthy trail mix cookies with raisins, flax seeds, sunflower seeds, pumpkin seeds, almonds, and oatmeal.

Recipe Ingredients for Lydia's Trail Mix Cookies

3/4 cups butter
3/4 cups brown sugar
1/2 cups granulated sugar
1 egg
2 tbsp water
2 tsp vanilla
1/4 cups flax seeds
1/4 cups brown rice flour
1/4 cups white flour
3/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
3 cups oats
1 1/2 cups raisins
1/2 cups almonds
1/4 cups sunflower seeds
1/4 cups pumpkin seeds

Recipe Directions for Lydia's Trail Mix Cookies

  1. Cream butter, sugars, egg, water and vanilla together on medium speed of electric mexier until light and fluffy.

  2. Combine flours, ground flax seeds, soda, salt, and cinnamon. Add to creamed mixture.

  3. Stir in raisins, almonds, seeds, and oats.

  4. Drop dough by heaping tablespoons onto greased baking sheet, or sheet lined with parchment paper. For crisp cookies, flatten. For soft cookies, leaved mounded.

  5. Bake at 350 degrees for 12-15 minutes, or until edges are golden brown. Do not overbake.

  6. Makes about 30 cookies.

  7. For a more decadent cookie, replace raisins with one cup of chocolate chips.
