1 cup unsalted butter
2 cups all purpose flour
3/4 teaspoon baking powder
1 pinch salt
1 egg yolk
3/4 cup sugar
1 tablespoon vanilla

Recipe Directions for Lusikkaleivat (Finnish Spoon Cookies)

  1. Melt the butter in a small saucepan over medium heat. Continue to cook, stirring occasionaly until the butter browns lightly and smells slightly nutty, about 15 minutes. Transfer the butter to a medium bowl and cool slightly.

  2. Whisk the flour, baking powder, and salt in another medium bowl.

  3. Stir the dry ingredients into the butter mixture to make a uniform but crumbly dough that looks like wet sand.

  4. Scoop out dough with a small teaspoon.

  5. Bake cookies at 325 degrees until just browned about 12-15 minutes. Cool almost completely on the baking sheets, and then transfer cookies to a rack to cool.

  6. When cool, spread jam if desired.
