Recipe Ingredients for Lunch Sweet Potato Casserole

2 cups cooked sweet potatoes, mashed
1 tbsp of melted butter
1/4 cup of milk
1/4 tsp of salt
1 tsp of cinnamon
2 tbsp of brown sugar
84 g (12 large) marshmallows

Recipe Directions for Lunch Sweet Potato Casserole

  1. Bake the sweet potatoes. (2 cups is 3-4 medium sweet potatoes.)

  2. Mash the sweet potatoes with the milk and butter in a large bowl until smooth. Add salt, cinnamon, and sugar and mix thoroughly.

  3. Spoon evenly into 12 foil muffin cups. Smooth the top with the back of a spoon.

  4. Place one marshmallow on its side on top of the potato in each and bake at 350 deg. for about 10 minutes, until marshmallows brown slightly.
