Makes 1 serving



Heat oil in a large frying pan on high. Cook salmon for 2-3 minutes, each side, until golden and crisp. Set aside for 5 minutes then flake with a fork. DRESSING. In a small jug, whisk all ingredients together until combined. Season to taste. In a large bowl, combine leaves, avocado, salmon, onion and half the dressing. Arrange on serving plates. Top with egg halves and dill and drizzle with remaining dressing. TOP TIPS l Add some parmesan croutons to this salad. They are easily made by tossing some bread cubes in a little oil and grated parmesan cheese. Bake in a hot oven, 200C, for 5-10 minutes until crisp and golden.

Recipe Ingredients for Lunch salad

1 1tsp Olive Oil
1 medium (4-1/8" long) Onions, Spring Or Scallions
1 large Egg, Whole
1 medium (3-3/4" long) Pickles, Cucumber, Dill
0.5 fillet Salmon, Atlantic, Farmed
1 serving Prepared Horse Radish
