Recipe Ingredients for Lunch salad

3 cups lettuce
1 small carrot, diced
1 small tomato
1/2 cup cucumber
1/2 cup raw green beans
1 tablespoon yogurt
1 teaspoon dijon mustard
1/2 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon dried cranberries

Recipe Directions for Lunch salad

  1. Make dressing by whisking yogurt, mustard, lemon juice, and olive oil, together in the bottom of a large bowl.

  2. Add lettuce and vegetables and toss to combine.

  3. Optional (must add to calorie count): add one 3 ounce serving of tuna or one 1 ounce serving of feta cheese.
