pre-made the night before, add some black eye pea salsa (other recipe) to it and great lunch at work.

Recipe Ingredients for lunch salad

1/2 cup baby spinach
1/2 cup watercress
1 cup avacado, sliced
1/2 cup beansprouts
1 teaspoon lemon juice
1 teaspoon black pepper
7 cherry tomatoes
1/8 cup of sunflower seeds, unsalted

Recipe Directions for lunch salad

  1. rinse and dry spinach and watercress place in tuperware

  2. add in rinsed/dried bean sprouts

  3. add in cherry/grape tomatoes

  4. add black pepper and seeds to

  5. add black eye pea salsa (or home made salsa of your choice for kick)

  6. bring lemon and avacado to work and slice avacado add to salad and squeeze lemon juice on and eat
