Protein and iron packed salad that keeps me from getting hungry until dinner

Recipe Ingredients for Lunch Salad with Chicken

2 cups romaine lettuce, chopped
1/2 cup sweet pepper, sliced
1/4 cup onion, sliced
1/2 cup cucumber, sliced
1/2 cup tomato, cubed
6 medium carrots, baby
1/3 cup chick peas
2 ounces chicken breast, sliced
2 tablespoons reduced fat feta cheese
2 teaspoons extra virgin olive oil
2 teaspoons balsamic vinegar
2 teaspoons water
1/2 teaspoon oregano
1/4 clove garlic, minced
2 dashes ground pepper
2 dashes sea salt

Recipe Directions for Lunch Salad with Chicken

Put first 9 ingredients in gallon ziplock bag and refrigerate. Put last 7 ingredients into small leak-proof tuperware (the type with screw on lids are best), shake until mixed, and refrigerate. At lunch time, shake the dressing to mix again. Open ziplock bag with salad (there will likely be some liquid, which I leave in the bag), and pour the dressing in with salad. Seal and shake to lightly cover salad. Dump on a plate, and fill up.
