Lunch Pasta Salad Recipe

Makes 4 servings



Simple pasta salad, with a kick. I make this up on Sunday evening and take a portion a day to work (it's not great after 4 days so you have to think up something new for Friday). Don't add the mayonnaise until the morning before you take it as it's very oily after a day or two.

Recipe Ingredients for Lunch Pasta Salad

2 stalks celery
1 red pepper
1 yellow pepper
1 cup frozen peas
4 spring onions
400 g cooked chicken (I prefer to poach it)
4 tbsp light mayonnaise
4 tsp hot chili powder
300 g fusilli pasta

Recipe Directions for Lunch Pasta Salad

  1. Cook pasta according to packet directions and run under cold water when cooked

  2. Cook peas according to packet directions and run under cold water when cooked

  3. Chop all vegetables (no, not the peas!)

  4. Chop chicken

  5. Mix all of the above in a bowl and put in the fridge

  6. Mix appropriate portion of chili powder and mayonnaise just before eating and mix with portion of salad
