Lentil and chickpea soup I made to get my vitamin consumption up. It's good for lunch. I make a large batch and then take some every day. Sometimes I add other stuff to it like diced tomatoes or potatoes.

Recipe Ingredients for Lunch Lentil Stew

3/4 cup lentils
3/4 cup chickpeas
1 1/2 cup carrots
4 tsp olive oil
4 clove garlic
1 cup kale
1 cup spinach
6 oz Hunt's Tomato Paste
2 cup water
1 tbs pepper

Recipe Directions for Lunch Lentil Stew

  1. Sauté lentils, chickpeas, carrots, spinach, kale, and garlic in olive oil and tomato paste.

  2. Boil water.

  3. Add pepper.

  4. Add sauteed veggies. Cook for about 10-15 minutes, until it's like a stew.
