*use 1 bag cooked Trader Joe's lemon pepper pappardelle pasta *use 3 tbsp Trader Joe's Orange Champagne Vinegar * use 1 container Trader Joe's fresh mango-papaya salsa

Recipe Ingredients for Lucinda's Summer Pasta Salad

8 oz cooked pasta
1 cup sliced carrots
1 1/4 cups chopped cucumbers
5 tbsp chopped green onions
15 oz. garbanzo beans
15 oz. salsa
3 tbsp vinegar

Recipe Directions for Lucinda's Summer Pasta Salad

  1. while pasta is cooking for 8-10 minutes,

  2. in a bowl combine 1 cup chopped carrots, 1 cup chopped cucumbers and 6 green onions

  3. add 1 can garbanzo beans

  4. add 1 container Trader Joe's fresh mango-papaya salsa

  5. drain and cool pasta or run cool water over it

  6. add veggie mixture

  7. add 3 tbsp Trader Joe's Orange Champagne Vinegar

  8. toss salad, chill and serve!
